Mahimahi has a sweet, mild flavor with lean and fairly firm with large, moist flakes. Mahimahi is low in saturated fat and is a good source of vitamin B12, phosphorus, potassium, protein, niacin, vitamin B6, and selenium. Mahimahi are usually between 8 and 25 pounds and the average filet yield is between 40-45%.
